Quantum Mega Leftovers

Quantum Mega Leftovers


Decided to make a ton of stuffed peppers and mushrooms, for Mega Leftovers and for a delicious dinner, sore tooth notwithstanding!

Gut the peppers and sausages. One sausage in each pepper. Remove the stalk from the mushroom and one sausage per mushroom. Easy as in real easy as in REALLY EASY! Trying some elephant garlic this time. HUGE cloves of garlic! Better taste? We shall see!
The Fixings
Needed 2 pans, one for the pepper tops with garlic bits in and around, and one for the stuffed mushrooms and peppers, as below.

Use a meat thermometer, and this took a little longer for some reason, so pushed it to 390 for a little longer.

And the rest is great dinner, with a green salad, blue cheese dressing, croutons, a dash of grated Parmesan, sliced tomatoes, wild rice and 'Screw It' Merlot - a BC wine too! And the dinner is delish, once again! But next time, back to regular garlic cloves. The elephant garlic cloves tend to overcrisp and do not have as strong a flavour. Not bad, but ... not best!
