A bit late, but .... the whole year is ahead of us!

Super quick and easy dinner tonight. Is there any other method to my madness?

Get yourself 3 different coloured peppers. They must be different colours, otherwise, they will clash. Serious clash, and that is not tasty.

Never has been. Never will be!

Slice off the tops as close as you can to give the best stuff-able pepper carcass possible. The tops can be used for dipping into Blue Cheese dressing...which I did throughout! Clean out the inside of each pepper - no nasty little bits left.

Then, the super easy part is the stuffing. I used Three Cheese: Swiss, Mozzarella & Old Cheddar burgers, but bundled up altogether and split up into three equal parts! Stuff the peppers, with whatever they will hold, capping out on top.

I like to use parchment paper ON the aluminum foil tray, which is IN the pan. Easy to clean up then. Super easy. Must.stick.with.the.program.......

Then ... COOK! About 30 minutes before done, start the wild rice. Found a cheap, but super easy rice cooker...and hardly any stirring and done perfectly!

I pulled the peppers once, halfway done, to drain the juices, and replace the parchment paper, and they turned out...MAHVOLOUS, DAHLINKS! Okay, so one pepper burst. Orange is the weakest colour of them all.

No.big.deal.

And they were delicious!

Served with iceberg lettuce, blue cheese dressing and ice cold coconut water and it is a fab dinner! 

Presentation is ... e.v.e.r.y.t.h.i.n.g.... unless of course.....it isn't.......

And the best part - leftovers for lunch and dinner tomorrow.
