Who said turkey is hard to do? Seriously? Hard? Just another Urban Turkey Myth, to be laid to rest!

You just need the stuff: turkey breast, onions, potatoes, garlic, mushrooms, garlic butter, salt, pepper, honey, sage, olive oil, wine and whatever else you think might be tasty. Various basic equipment includes tray, foil, knives, thermometer, cutting board and about 20 minutes to prep. That.is.all!

It is very important to be listening to CBC radio while preparing this. And if you can listen to Vinyl Cafe - Dave Cooks the Turkey ...... so much the better!

So, crush as much garlic as you want. Keep some peeled cloves. Chop some onions. Clean and peel some potatoes.

Open the wine. Seriously. Open the wine now.

Clean some mushrooms. Turkey breast next. Smear some crushed garlic under the skin. Throw in lots of sage there too. Even under it. Salt. Pepper. Put in tray. The rest of the peeled garlic cloves......just throw to the side or even under the skin. Baste the turkey with some olive oil. Pour some honey all over. Cover, and I mean COVER the turkey with the crushed onions and whole mushrooms. Impale the bird with the temp gauge. Encase in foil. Drink to his impending glorious culinary destiny. Cover and cook for about 4 hours. About half-way, melt some garlic butter and douse the bird. Check the internet for any missing details, like temperature, although my gauge is good at marking 'Poultry'. Easy is good. Good is easy.

Boil some potatoes about 30 minutes before turkey done. Deal with the gravy any way you want. But make sure there is gravy.

There.must.be.gravy!

You will get this without breaking a sweat:

Potatoes need to be mashed. Gravy needs to be hot. Add arugula salad, with croutons, blue cheese dressing and grated Parmesan on top. Serve everything up with red wine. Yes. Red wine. Don't argue. Just do it. Another Urban Myth ..debunked!
