Leftovers were just as good as last night!

I was hoping .... and it did pay off! The leftovers were actually quite good! The only thing I would change would be to add a bit more pancetta, actually find and use shallots and I will experiment with other flavours of cheese! 

Otherwise, this is an excellent recipe and I give it my new culinary ranking of:
